A naturally fermented white sourdough made using a mature levain, developed over an extended fermentation to build flavour and structure. The dough is mixed, shaped and scored entirely by hand, then baked to achieve a crisp, caramelised crust and an open, irregular crumb. Simple ingredients, guided by time and technique. Each loaf is naturally unique in appearance, reflecting the handmade process.
