A classic spiral viennoiserie made from hand-laminated dough, prepared with a pre-ferment to enhance flavour and texture. Layered with pastry cream and succulent raisins, then rolled by hand and baked until lightly caramelised. Soft at the centre with delicate layers throughout. Each piece is individually formed and naturally varied in appearance.
